The absence of work processes means everybody works the artisanal way, the way they think is best.  When people change, typically the way of working changes.  There is no system in place that sustains good ways of working, when people change.  Customers and Employees see that, and it does not add to their trust and credit.  Reliable and repetitive outcomes and results are needed to convince Customers and Employees to stay and thus build lasting competitive advantage.  A Customer or Employee Experience that is not repetitive quickly damages an organisation's reputation.  So long story short, we need work processes that flow and make sense to Customers and Employees, have little losses and waste in them, hence flow, and are executed consistently.  This is Process Excellence.  Having a process does not mean we will still have that process in a few years time when people have changed, let alone have that proces improved.  Processes need to be formalised, documented, checked and deviations addressed. When outdated, they need to be renewed, no loss, no waste.  This is Systems Thinking. We put Proces Improvement and Sustainment practices in a system by installing rituals that last.  These rituals are called Audits, Leader Standard Work, Improvement Projects, Problem Solving and so on.
